Gluten Free Banana Bread

I've found a delicious gluten free recipe for banana bread! My ten month old loves this for breakfast or just for a snack. It's the perfect texture for him. Thanks to Julia at http://www.fatgirltrappedinaskinnybody.com

Paleo Banana Bread
Ingredients
  • 3 very ripe bananas (about 1 ½ cups) mashed
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 tsp almond extract (optional, but we love it!)
  • 1 tablespoon honey (agave or maple would work too)
  • ¼ cup coconut oil, melted
  • 2 cups almond meal (I get mine at Trader Joe’s)
  • ½ teaspoon salt
  • 1 teaspoon baking soda
Instructions
Preheat oven to 350 degrees. Grease a loaf pan.
Add the bananas, eggs, vanilla, honey and coconut oil in a food processor and pulse until the ingredients are combined.
Add in almond flour, salt and baking soda and pulse a few times.
Dump batter into a greased loaf pan.
*I used a 4×8 inch pan. The larger the pan, the flatter the loaf will be, so use a smaller loaf pan to add height to your bread.
Bake for 55-65 minutes, until a toothpick inserted comes out clean.
Remove from oven and allow to cool in the pan.
Remove from the pan, slice and serve.
Store in an airtight container for up to 4 days.
I used a metal loaf pan and cooked mine for 45 minutes. Just keep checking it with a toothpick every few minutes after the 40 minute mark so it doesn't get too done.

New Library

Colson and I went to the new Lee County library today on Oakland Parkway. It was so nice!! They had a very nice set up and a great selection of kids' books and DVDs. They are still trying to add the finishing touches on the decor and are asking if anyone has any birdcages or other knick nacks they are wanting to get rid of, they would love them to decorate the library. They are trying to make it feel homey.

Health and Wellness

My best friend introduced me to a company recently that focuses on health and wellness. They are called Melaleuca. Their goal is to help you clean up your home and life. Instead of using harsh chemicals like bleach in their cleaning products, they use natural oils such as tea tree and thyme. Child proof caps aren't necessary for their cleaning products because they are so safe. Since having a baby, I'm definitely more aware of things like that! Another good thing about Melaleuca is that everything comes concentrated. You mix it with water and it lasts a long time plus less trash! Well, I was very concerned  about how well these products would clean. They work really well! We have very hard water that has left hard water build up on our glass shower doors. I had tried everything to get it off and nothing worked. Their tub and tile cleaner took the build up right off. Melaleuca also has beauty products and a high end line similar to Bare Minerals with all natural ingredients. Most of their cleaning and beauty products are gluten free!!!! This is huge if you are gluten intolerant. Their products are so affordable compared to other lines that are expensive. If you want more info on this wonderful company, just let me know!

Here we go!!!

So, I've decided to start a blog. I can't promise there will be a post every day, but I'll do my best! So, who am I? I'm a veterinarian in Albany, GA. I've been married for almost 5 years to Jay and we have a 9 month old baby named Colson. My husband does Crossfit (used to go to a gym but now has his own set up in the garage). This is working better since having the baby...saves us money plus he can work out anytime. We try to eat healthy sticking with lots of fresh veggies and fruits with some lean meat thrown in. We have found we feel better when we limit our gluten as well. I'll try to post some recipes we've found for some yummy gluten free desserts. Well, my little man's nap time is almost over...gotta run! I'll leave you with a delicious gluten free and sugar free donut recipe we tried last night.
